Less than a week away from Chirstmas and we are in hyper-drive to complete all tasks before— not one, but two— long weekends. I’m so glad that both holidays fall on Saturday this year.
I’ll still be packing bento lunches though. Like many of you, Saba Man does not have the same luxury but at least he’ll have nutritious and yummy lunches to see him through.

Saba Man seems to like the Lazy Tuna Sushi so I packed a few for him. But for fear of carbo-overload, I modified the recipe a bit.
Instead of using all white rice I mixed it half-n-half with brown rice which I proudly named “hapa rice” then shaped each piece with extra tuna.
“Less rice more tuna” is his new mantra!
Also in the bento box are snap peas, tomatoes (again) and broccoli (again).
It’s a strange combo with the vegan sausauge, but we gotta eat our way through the bento-stash to make room for newer, fresher fare!

What a difference a week makes…last weekend was a whirlwind with a house full of guests and this week there was only me (and 2 kitties) while Saba Man was out of town. We’re kind of on a regular bento schedule again so I’m kicking off the next work-week with this baked salmon bento.
