Tofu again! Hey, it’s my “go-to” protein. Quick, easy and absorbs any flavor that you throw at it.
This time…hoisin sauce. I found a very nice vegetarian type and tossed it with baby bok choy, shiitake mushrooms, onions, fried tofu cubes then simmered until tender.
Brown rice topped with furikake with a slice of takuan. Takuan (takuwan), pickled daikon, is risky for the work environment. It’s very stinky. He hasn’t mentioned it but I’ll have to ask Saba Man if his co-workers have commented on his odorous lunches. I’ll let you know his answer.

Another Back-to-School bento idea for today’s post. How about ravioli and sausage? Yes!!!
And packed in one of my most favorite Elph boxes from Japanistic.
Today’s bento is filled with mushroom ravioli, vegetarian sausage, asparagus, carrots, bit’s of smoked mozzarella and a cherry tomato.
If you decide to pack a similar bento just remember to keep things light and not add too much sauce. And you can add almost any type of vegetable if asparagus in not a favorite.

This vegetarian bento could be mine for the taking, but Saba Man liked it so I packed it in his lunchbag!
Shoyu chowmein garnished with ginger and green onions, fried tofu and what’s left of the baked amber cup squash.
I really should cook more than one squash at a time. We go through it so quickly.
The chowmein is another addiction! Hello? Can’t stop eating noodles since yesterday’s #twitterpastaparty!
I’m so carbed-out… but that won’t stop me from participating on November 1st #twittersushiparty!

It’s #twitterfoodparty Monday! Every last Monday of the month some twitter foodie friends share a photo of the that month’s theme. October is pasta or noodles!
My dish is “Cake Noodles with Tofu!” Double-cooked chowmein noodles, lightly boiled, then fried into a cake, cut into squares and topped with a savory mix of fried tofu, carrots, onions, shoyu, and vegetarian hoisin sauce!
It’s crunchy-on-the-outside then soft-on-the-inside sensation is tantalizing and I can’t stop eating it.
We are using the hashtag #twitterpastaparty if you’d like to follow or contribute! No pressure to do so but it’s a lot of fun!
