Mahi Mahi Sandwich Bento

Posted on November 10, 2011 by Debra

I know what you’re thinking. Where’s the sandwich?

It’s actually deconstructed.

Garlic naan.

Butter-poached mahi mahi.

Saba Man could choose to assemble when ready to eat!

Which he did.  And he immediately text’d a message declaring that he should be called Mahimahi-Man for the day!  :)

He enjoyed it.

And he loved the squash, corn, bean and red cabbage salad.  There was enough vinaigrette to coat the lettuce leaves so he ate it all. The bento box was completely empty upon return!

Mahimahi-Man indeed.

I just had butter-poached cod yesterday, love that preparation! :) Looks like Saba Man is really a lucky guy!

Butter-Poached ANYTHING sounds amazing. But how exactly do you do your mahi mahi? When I searched for recipes, some came up all butter, some butter and oil, some with butter and water. They all started with a *pound* of butter. Bento size portions have got to be more manageable for a home cook.

Hi Folly, I mixed half a stick of butter with enough water to partially cover two thin mahi fillets. Bring to a simmer and flip them over carefully until done. Add whatever spices you like.

That’s so cute! Good for you MMM! That looks and sounds so good; especially that salad. So refreshing and light.
