Meatless Monday Bento
I swear Mondays come around more often than any other day of the week!
And here it is again.
The upside is that I get pack a vegetarian bento for Saba Man. Today’s lunch, or I should say dinner because Saba Man is working an oddball shift today, is a melange of previously fried tofu, asparagus, carrots, sesame, shoyu, mirin, ginger and garlic.
I’ve separated this mix from the hapa-rice with plastic baran; something I don’t normally use but glad to have because I’ve run out of fresh lettuce of shiso leaf.
Champagne grapes, cherry tomato and a pinch of beni-shoga complete this meal-to-go!

Yummers! For hapa rice, do you cook in rice cooker? if so, do you need more water? I would love to start adding brown rice to our diet! Thanks!
Hi Tj’s Mom, I usually soak my brown rice for about 20 minutes before cooking. I also wash the white rice separately before combining. However, if you don’t pre-soak then I would add a little extra water…maybe an extra 1/4 cup per 1 cup of haparice.
Yummers! Wish we could ban Mondays for awhile. I’ll take two Tuesdays any day!
I always hope that some Monday I’ll find a second vegan bento here JUST FOR ME.
