Meatless Monday Bento

It was a whirlwind week folks!  I took a short trip to Vancouver BC., received out-of-town visitors, and took in the sights and sounds of Seafair; Seattle’s annual celebration of boats, planes and summer-time fun!

Now we are back to reality with another start to a busy work-week!  And without missing a beat I somehow managed to pull together a Meatless Monday bento for Saba Man using a combo of leftovers and bento-stash. 

Our hectic schedule called for Chinese take-out more than I’d like to admit but hey… yummy bit and pieces of noodles, tofu and veggies make wonderful bento-filler.  I tossed in a few slices of simmered wheat-meat (seitan), slaw (from the deli), tomatoes, snow peas and a gorgeous piece of purple sweet potato for balanced and tasty lunch!
