Hiyashi Chuka Bento Box
Summer is in session…finally. Sunny skies and warmer temps have finally arrived in Seattle!
And you know what that means? Correct. Cold noodles for lunch!
Hiyashi Chuka have filled many a bento box lunch at our house and I’ve even featured it for a Back-to-School bento along with recipe.
Yes, hiyashi chuka is perfect for school lunches. It’s delicious at room temperature and can be customized for individual appetites!
Saba Man has converted to “fish only” so there’s no more ham or chicken covering his noodles. Instead he has kamaboko fishcake, egg omelet and tofu for protein.
He also has crunchy seaweed and a dab of pickled ginger.
The cucumbers are a de rigueur but again the beauty of a cold noodle dish is that you can top it with almost anything you want! Which again makes it ideal for school lunches, especially multiple school lunches.

Hi Debra! Thought I saw a recipe you made for eggs w/rice? Kinda of scrambled in the rice. Thought I saved this recipe but can’t seem to find it. Hope you can help me. I swear saw it on one of your “meatless” Monday recipes.

Hmm… are you thinking of this Lazy Sushi recipe? It contains tuna but can be modified to use only egg.
Hope that is what you were looking for.
Otherwise, I usually just do a regular scrambled egg on rice or omelet on rice.
