Meatless Monday Bento
Today’s Meatless Monday bento features, fried then simmered tofu! I buy the already fried tofu from one of my favorite shops in The I.D … I’m fortunate to have access to many tofu sources…then I simmer them in the usual teriyaki-type sauce. They’re full of flavor yet remain light and very un-greasy!
Along with the tofu…hapa-rice, simmered bok choy, sweet pototo, lotus root and a broccoli-tomato salad.
Hope everyone had a nice weekend! We finally had a warm and cloudless sky here in Seattle yesterday…but don’t be jealous…we are back to normal with gray skies, rain, low temps and a bonus…thunderstorms!

hello! i just stumbled upon your blog because i purchased some packaged pre-fried tofu and i was searching on google ways to cook it. i still don’t know whether i did it right but i just cut it up in smaller cubes and stirfry’d it with some vegetables. fingers crossed i don’t die in the next 20 hours
anyway, i have just moved to vancouver and am thinking of taking a trip to seattle quite soon!
Hi Katie, Thanks and welcome to our blog. So glad you found us. You’ll be fine with stir-fried tofu with veggies for a couple of hours as long as you drain as much liquid as possible first. That’s the key!
This looks absolutely delicious! It’s been a long while since I’ve had fried tofu. I think I’ll use that in my next bento.
