Meatless Monday Bento

Can you believe it’s Monday already?   And that means it’s time for another meatless meal.

So without further adieu…insert drum roll… Seitan Katsu!

Using my vital wheat gluten/falafel mix combo recipe, I baked, dipped in egg, rolled in panko then fried.  Yum.  Except  I’ve been frying  a lot lately.   This is a habit that needs to be broken.

Why does frying taste so good?

The rest of the bento is the uauL steamed broccolini, raw carrots and simmered shiitake mushrooms.  If the top tier of rice looks green to  you, you’d be correct.  It’s a green bamboo rice mixed with regular white rice.

    Mmm! I know, frying is bad but tastes oh so good! I’ve never heard of green bamboo rice. Sounds delish! Always so beautiful your bentos Debra..

    Frying is fast and easy too; I do the same quite often. I wish the green didn’t wash off the jade rice so much. It sure starts off very dark in the raw. Happy meatless Monday!

    This sounds and looks tasty even though I don’t eat egg! And I agree – it does taste so good but you have to limit to once in a while. :(
