Salt and Pepper Tofu Bento
We had got an ominous warning a few days ago from the weather man. Winter storm WARNING! I took that as a free pass to stock up on as many ready-to-eat foods as I could possibly fit in my fridge.
Roasted chicken and salads-3 different kinds!
Of course the storm never arrived to my neighborhood. Oh we got snow, but not enough in my opinion to score it as a storm. *eye rolls*
On the upside, plenty of bento items to choose from! And just to prove that I’m not completely lazy, I cooked up a batch of Salt and Pepper Tofu for that homemade touch.
Anyways, Saba Man packed his overnight bag (he does this with every Winter Storm WARNING) in case driving conditions are too severe to return home— and his bento lunch.
Saba Man suffered through the storm (dripping sarcasm) and survived long enough to enjoy: herb roasted chicken, a colorful rice salad, my salt and pepper tofu, tomatoes, carrots, snap peas and broccolini.
But…Old Man Winter got the last laugh—soon after SM called to describe the roads as “all clear” and there was ”nothing to worry about”, the snow-gods made promise on their threats and dumped copious amounts of white stuff at his location . Saba Man was officialy stranded.
The good news… his stomach was full and he had his overnight bag!
