Egg Nog Butter-Mochi

Warning!   For serious butter mochi lovers only!   Presenting… just in time for the holidays…

Egg Nog Butter-Mochi!  Oh yeah! 

Did I mention that I LOVE mochi.   Not sure why but I suspect it’s because it’s high in calories and carbs. :P

Egg Nog Butter- Mochi

4 cups mochiko (sweet rice flour)
2 1/4 cup granulated sugar
3/4 cup powdered sugar
2 teaspoons baking powder
4 eggs, beaten
1 stick melted butter
2 1/2 cups egg nog
1 can evaporated milk
1 1/2 teaspoon vanilla
1 teaspoon ground nutmeg

Mix together dry ingredients in large mixing bowl. Mix all liquids together in a separate bowl.  Add liquid ingredients to dry ingredients. Blend until smooth.   Pour into greased 9 x 13, or 2 square cake/brownie pans.

Bake at 325 degrees for 5o minutes then check if the middle is firm.  Bake for about 5-10  more minutes, or until golden brown. Cool and cut into desired pieces.  Sprinkle with powdered sugar.

I used store-bought egg nog, but I bet homemade would  be amazing!

I also baked a few mini-cupcake sized mochi.  For this option, fill mini cupcake liners about 3/4 full then bake at 325 degrees for 30-35 minutes.

 

Tinkering with microwave version similar to this matcha flavored mochi… you can thank me later.

    Yeps, you are a serious butter mochi aficionado (addict/obsessive/whatever)!
    It’s difficult to pinpoint the precise reason for this affliction, it’s true. Don’t forget the buttery chewy factor. Egg nog too? Woh. Mmmm!

    Oh yum yum!! This looks good. I think I might hafta try this..i was thinking of just making boring ol’ mochi, dunk it in kuromitsu and kinako but this…butter? :D mmmm

      Hi diva! Thanks and welcome to our blog! I love kinako and traditional mochi. But sometimes I just have to let go… :)
