Teri Chicken and Ambercup Squash Bento
Both Saba Man’s lunch and snack bentos contain the same delicious ingredients!
Teriyaki chicken, roasted ambercup squash, tomatoes, and brown rice.
A giant, juicy umeboshi crowns the top tier.
Originally, there were more tomatoes but I replaced with black grapes for that little somethin’-somethin’.
This compact snack box easily holds a large boneless-skinles chicken thigh. Along with a tightly formed musubi (a cup of rice)…maybe a meal instead of a snack for some?
















































I can’t take my eyes off the snack box – wished I had access to that when I’m needing a snack!

Wow! I can’t believe that a whole cup of rice and a chicken thigh fit in the snack-sized box! On some days, the snack box alone might be enough for a meal; others, I’d be glad to have both boxes to get me through the work day. Too bad I never know how hungry I’m going to be until it’s too late.

I like the addition of the grapes, the black gives a nice pop to the box. It’s hard to judge the amount of food on a given day. I’ve started making an “average” box for myself, and then doing a smaller snack box with items that won’t go bad after being out all day. If I eat the snack box, great. If not, it can come home, go in the fridge, and be incorporated into dinner or the next day’s main box.

Since my daughter is still with me all day, I just make enough for both of us in 2 boxes, then we share. We usually have some left over for an after-nap snack, either on-the-go still, or else at home. I use an insulated bag and ice pack to keep my food fresh. If I have food that should be warmed, I keep it together in one box, rather than spread it between both our boxes, so it’s easier to heat!
I’m not advanced enough yet to put ‘real’ food in our lunches! I’m still at the cutting shapes out of veggies, cheese and sandwich stage. Leftover dinners scare me.
The teriyaki chicken is such a great snack! It looks awesome. I think the olive looks good, the pink box gives it some added color the tomato usually fills in. I love the aqua one!
