Insalata Caprese “Side Car” Bento Box

I’m “digging up” some bentos from last year’s Halloween and fall season and bringing them back-to-life!

Here’s my contribution to the Halloween themed bento boxes. Although this is more of a side dish than a true bento box, I’m posting it anyway in honor the holiday tomorrow. A nod to “The Little Shop of Horrors”.
It’s no secret that I love caprese salad and miss the warm days of summer with a bento box filled with buffalo mozzarella, hot house tomatoes and fresh basil. Well, it’s definitely not summer, but the ingredients are the same.
The tomato is hollowed out and stuffed with smaller grape tomatoes. The mozza is under the plant and the basil, well you can see all the basil. This is the cute little Frankenstein bento box which has a nice raised cover and will allow full closure after I tuck the leaves inside. A little container with the olive oil will be placed inside Saba Man’s lunch bag along with his bigger bento box.

The resemblance is uncanny, and I applaud your choice in musicals! I can sometimes be found belting out “Suddenly Seymour”, ahem.
