In-Flight Miso Chicken Bento
Miso Chicken for an in-flight bento? Yep.
This bento was packed for a traveling-solo family member who happened to stop at Seatac Airport for a connecting flight. During this transition we exchanged omiyage (gifts) including this bento box lunch.
While planning this brief visit I had asked this cross-country flier, “what do you want in your bento?”
“I don’t care, surprise me!”
I love it when they say that!
Here you go…
Sweet miso chicken, using this recipe sans roasting. I pan fried instead.
White-rice musubi with furikake, 2 ways.
Fried tofu with onions which I buy pre-cooked at the market. (they do it best)
The ubiquitous cherry tomatoes and cucumbers.
All layered on a bed of shredded cabbage and packed in a reused take-out container. (I ‘m so glad I started this habit of stashing these boxes)
In another box, for dessert (sorry no photo), I included…butter-mochi!
And along with the butter-mochi…another dessert that’s close to my heart…can you guess?
Nanaimo Bar! Okay, a little background—last year I went on a quest, a hunt of sorts, for my first Nanaimo Bar, which I found… in Nanaimo, Canada! I blogged briefly about it here.
Later, I received a “landed safely at home” text and this photo of the miso chicken bento!

Hi Debra! I liked it very much. It is so different from the way I usually marinate chicken. But it was too sweet for my man. I’ll keep the recipe for my bento and enjoy it alone!!!
