How to Pack a Bento #2
Continuing our video/slideshow of “how to pack a bento” with this quickly made bento lunch using leftover pancit (Filipino fried noodles) from a party! I also reached into my bento-stash of hardboiled eggs to provide extra protein.
Although boiled eggs are fairly easy and quick to cook, I like keeping a few, aleady boiled, in the refrigerator as part of the stash. They come in handy when I have a mental-block in the middle of packing a bento. I usually boil 6 eggs at a time then store them for a few days. I’ve read that hard boiled eggs have a shelf life of a week in the refrigerator, but they don’t last that long at my house.
I soak them overnight in miso or shoyu for added flavor too!
But back to this pancit! Saba Man’s office had a little pot-luck gathering and there was a large plate of pancit left; of course he couldn’t bear to see it wasted so he brought it home and had pancit for dinner that evening, then for breakfast and for lunch in this bento!
With that said… on to the video!

Hi Dionne, Thanks for your comments and welcome to our bento blog. Hey, I’m sure if I know how to make pancit either! Our friends are always cooking it for us so I don’t have to! LOL
