Mini Teri-Chicken Pita Bento

I lingered in the bakery of a local grocery store a moment too long which in hindsignt was a good thing because I saw these cute mini pita breads!   “What a  perfect size for bento lunches”,  so I added the bag- of- a- dozen to my cart then “hightailed it” out that carb-laden department.   I can’t resist fresh baked goods.

The same store also had free-range chicken on sale so Saba Man was delighted to have “real meat” for a change.  ;)   So there you go… teriyaki-chicken-pita-pocket sammies!

They were so easy to make too.  I skipped the marination part and just simmered the chicken thighs, sans skin in the sauce until done.  Then I stripped the meat off the bones and  added back to the sauce.  Then draining the chicken “strips” I stuffed the pieces  into the pockets (cut in half)  after lining with lettuce.   Not too moist and very tender…this bento warranted a phone call! :)  

“That was good, Honey!”   

I answered…”how did you know I used honey in the teriyaki marinade?”

“Ha ha ha…”

Oh and there’s also some plum vinegar cucumber salad in the bento with the strawberries and tomotoes too.

    Yummy teri pockets, I’m sure every savory bite was delish. Love the way the berries look huge next to the mini-sammies! I have the same weakness for fresh baked goods :)

    I love these! We buy mini-pita breads all the time because they are perfect for the kids’ bentos. I have leftover roast beef, I may need to experiment with that!
