Scrambled Eggs Bento
Our schedules, Saba Man’s and mine, have been pretty wacky these past weeks and keeping up with packing our lunches at odd times throughout the day and night was a challenge! And truth be told, Saba Man ended up *whispering* ” buying a lunch” last week! But now we’ve re-grouped, timing has be re-calibrated and we are back on the bento bandwagon!
Today’s featured bento is a fairly simple one, cucumber stuffed chikuwa, simmered kabocha (from the bento-stash), baked sweet potato slices (also from the bento-stash), string beans, tomatoes, brown rice and scrambled eggs! (Recipe here)
Not your ordinary scrambled eggs mind you… I added chopped Korean garlic chives which in my opinion is one of the greatest flavors in the “whole wide world”. Hyperbole, I know…but let me explain.
Ever since I was a kid I’ve had a love-hate relationship with eggs. We ate eggs for breakfast mostly on weekends when my dad cooked us brunch and he did it big too. English muffins or waffles, bacon, home-fries, “you name it he made it”, BUT my dad would cook each of us a single fried egg… over-easy… with runny yellow yolk. Yuck. I hated it and nothing could convince me otherwise.
Punishment or forcing me to do the dishes did nothing to change my mind or taste buds. So I was convinced that eggs were pure evil, brought to earth just to traumatize me during weekend brunches. The menu eventually changed to include scrambled eggs, but by that time it was too late! I despised eggs. Even french toast didn’t stand a chance!
One time a baby-sitter made egg salad sandwiches for lunch and tried to feed it to me. You would of thought she was making me eat worms the way I carried on. The drama. Hahaha!
Then one day my mom cooked an omelette with chopped Korean garlic chives… and it was like the clouds parted and the sunlight cast it’s rays of hope upon my bowl of rice and eggs!
After that I was able to, albeit slowly, work my way to eating tamagoyaki, cheese omelets, egg drop soup and the like. But even to this day… an over-easy fried egg is scrutinized and I advance with caution. Sometimes I’ll eat it but mostly I don’t. I even have to be “in the mood” to eat my favorite bibimbap which is always topped with a fried egg!
Saba Man is the complete opposite and he will scarf up eggs without hesitation even sunny-side up! Not me, it would take a ton of Korean garlic chives to get me to eat a partially cooked egg!
















































I have a hard time with eggs too. I still can’t eat poached or over easy. I would rather have crispy edges than runny anything. I also like a little cruch in mine, not all mush. I have to add cripy fried totillas in the last minute of scrambling them. I should really try it with Korean garlic chives!

Haha! Sorry to laugh, but it’s a funny story Debra! Well, funny yet sad. My dad loved soft-boiled eggs and would try to offer them to me, but they were so repulsive! Still don’t know how folks can stomach it. However, I adore all other kinds of eggs. Luckily eggs are one of those foods that miraculously take on completely diff qualities dep on how they’re cooked. Glad you discovered Korean garlic chive combo. My fave is with sriracha, or gojuchang, and esp in bibimbap!!

so funny the different food aversions we develop as kids! glad you are enjoying some forms of eggs these days – and the korean chive version sounds just killer. this box is beautiful, too – the stuffed chikuwa is pretty, and all the veggies are so carefully arranged.

Ha ha, I was the same way.
Only, I despised ALL eggs.
My whole family would LOVE them. ANY kind of egg, it would be eaten faster then you can say “I hate eggs” lol
I, however, hated the plan weird taste of them, along with the texture.
To this day, the only way I’d eat an egg would be scrambled and VERY dry, LOADED with different herbs, and on a good day I’d eat deviled eggs.
I’m opening my door a little more as I learn more about eggs, or even food for that matter ^_^
Anyway….the eggs in YOUR bento, I’d eat in less then half a second ^_^
