Chicken, Rice and Cucumber Bento Box

It’s “Valentine Week” so I’m busting out the pink hearts  to spread the love.  I’m seeing some remarkable  RED themed bento boxes for “The BOMB Challenge” so I thank all of you from my heart:)   We are also pushing through our other challenge, our own personal goal of not spending ANY money on take-out, restaurants or coffee shop food and beverages for the entire month.  I never thought in a million years that I would make it to day nine!  Throwing in another $20.00!  Whoohoo!

With that said… today’s featured bento box contains more brown rice and hijiki seaweed.  I’m liking the flavor so we will stick with it for a couple more bentos.  The chicken was rubbed with Hawaiian salt, miscellaneous herbs and cracked pepper then baked.  Cucumbers are sliced then tossed in toasted sesame seeds with just pinch of sea salt.  (I’ve been on a salt kick and have quite a collection going)  Colorful tomatoes fill the gaps and of course the iconic umeboshi is like the “cherry-on-top”!

Ahh…”love is in the air”!

    Hi sheri and gamene, Thanks for your nice comments. I take my cues from your creative use of craft paper. so thanks again for the inspiration.

    As for the salt, in the past I really never gave it a second thought and figured all salt would taste the same. Not true at all.
