Grilled Salmon and Eggplant Bento Box

Today’s featured bento has salmon patties grilled with lime and garlic, eggplant simmered with ginger shoyu, brown rice with hijiki seaweed, carrots and tomato trio!

I had leftover sushi rice from yesterday’s Superbowl feast but ran out of aburage so what’s a bentoist to do but stuff it into a box lunch. ;)     The salmon patties are grilled with garlic oil with freshly squeezed lime juice and topped with lime zest.   The eggplants or aubergines (I love saying aubergines) are simply simmered in shoyu and ginger until tender.    I’m loving the tomatoes that I have right now.  They’re very colorful and I chose a one of each hue for today’s lunch.   Bagged carrots were on sale so … there will be carrots galore for the next few days.

Update on my refrigerator hunt.  I think I found the brand and style to fit our needs but I’m trying to hold out until the end of the month to replace it.  The $avings Challenge was a stroke of clairvoyance  don’t you think?   We were saving up for a vacation, but it looks like our newly found pennies will go towards a  kitchen appliance instead.  Please keep your fingers crossed for and keep positive thoughts that my poor refrigerator doesn’t die before March 1st.

Speaking of the $avings Challenge… we put away another 20 bucks today!

    Mmm, salmon patties sounds great, and yet another way to do eggplant! I missed the refrigerator saga, but I’m crossing fingers for you that yours will make it til you’re ready to replace. Or you could do like us: we keep our Costco jars of artichoke hearts and pickles in the cold garage!

      Thanks sheri! We keep our bottled water and some items on the back porch during these cold months. The garage is a good idea too.
