Coconut Curry Chicken Bento Box

Posted on January 30, 2010 by hapabento

Saba Man’s office had another “potluck” lunch (they are always having those) which yeilded lots of goodies for bento boxes.  After the luncheon was done and the  leftovers divided up, there was still a huge pot of coconut curried chicken.  Saba Man volunteered to bring it home.   :)

Fo a couple of nights I had it pretty easy… just reheat his dinner then pack bentos with the same.   But… the weekend has arrived and the easy life has come to a close.  Menu planning , grocery shopping and cooking is underway.  The good news is that all the fun leftover foods has provided much  inpiration and  Saba Man is looking forward to  new bento foods like fried noodles,  bbq meatballs,  and the beforementioned coconut curried chicken!

In the meantime.. here’s today’s featured bento box.  Coconut curried chicken, shoyu chicken, white rice, tomatoes and steamed broccolini knot!   Fresh shiso leaves  act as both wraps and baran.

There’s  a couple celebrations  in mid-February… smells like more “potluck” is in the air!
