Grilled Salmon Bento Box
Today’s featured bento box contains grilled salmon patty….what? Allow me to finish, grilled salmon patty, baked falafel, sliced kamaboko, and ROASTED brussels sprouts! Were you worried?
While we’re at the roasted brussels sprouts, (btw – I realize that I’ve been spelling brussels sprouts incorrectly… it’s brussels with an ‘s’ ) a quick reminder that this month’s The B.O.M.B. challenge is open until end of day tomorrow the 20th.
These brussels with an “s” sprouts are quick roasted with my house recipe; olive oil, salt and pepper. Roasted at 425-450 degrees for 20 minutes or until my house starts filling up with smoke! (And you thought I decided to end the roasting challenge because…?)
The other items are the familiar fan-style slices of kamaboko, baked falafel, steamed edamame, yellow carrot sticks. grilled teri-salmon patty (salmon soaked in teriyaki sauce ) and brown rice.
The brown rice is dotted with neriume (ume paste), Japanese pickled cucumbers (I can’t remember what they’re called), and nori strips.
A quick word about the salmon patty, which is grilled on a George Foreman. I love my George Foreman grill! Anywho, if you’d like to eat the most awesome fish sammich, try marinating salmon in teriyaki sauce, grill then placed between toasted or grilled bread roll slathered with garlic aioli. (I also realize that I’ve been saying “garlic aioli” … um… “aioli” MEANS it has garlic… duh! )
I wonder how brusselS sprouts would taste with (garlic) aioli?















































it all looks so yummy, and the kamaboko and yellow (!!) carrots add beautiful color. TONS of amazing flavors too, from the garlic to the teriyake and tart ume/pickles. YUM!

I love all the vibrant colours in this bento and the fact that you used all the different cooking techniques. As far as the brussels sprouts are concerned, I hadn’t even noticed your misspelling. Brussels is the capital of Belgium, and as this highly underappreciated veggie is orginally from my country, that’s where the name comes from
