Roasted Vegetarian Bento Box
The weekend brought no rest for me so this will be another short post. Hope you are not tired of reading about roasting yet?
Yes, today’s featured bento contains mostly roasted foods for January’s theme. Roasted delicata squash, carrots, broccolini, red bell pepper, and a cute onion. All but the carrots were cooked in the same manner; garlic, olive oil, salt and pepper. I tossed some parm on the broccolini before realizing that the cheese disqualifies the bento box from being vegan! Oh well, vegetarian bento box for the win! Not sure if it counts as roasting, but there’s Field Roast in there too!
The mushrooms are the lone simmered food which was done in ginger and shoyu. That’s it.
