Roasted and Vegan Bento Box
I thought that when the holidays were over, I would be able to relax a little and catch up with all the “stuff”… nope! So today’s post is a quick one!
Today’s featured bento is both vegan and roasted! “The B.O.M.B” for January’s roasted theme is still in effect … let’s see ‘em!
The main course is stir- fried mini bok choy and seitan—which I made from scratch!!! I will post the step- by- step recipe with photos soon. I’m so proud…seitan is a dough! It wasn’t perfect but I’ll provide details this weekend.
Now for the roasted item which is satsumaimo or Japanese sweet potato. Baked then roasted and finally brushed with sesame oil! These puppies are heavenly. The remaining space is filled with fried tofu and some tomatoes.
Looks like this bento box has a little of each cooking method. Stir-fry, fried, baked, raw and of course roasted! Did I already mention “The B.O.M.B.”? :)















































Debra you are great in cooking and making bento together. I’m very curious on how you make the seitan from scratch. I eat couple of times at the vegetarian restaurant but never thought to make it myself hehehehe …
