Lemon Chicken Bento Box

Today’s featured bento box almost didn’t happen. I had big ideas on making baked lemon chicken, similar to the mochiko chicken recipe which was done a while back. I’m not sure what happened, but the chicken breast just didn’t seem to cook in the toaster oven as well as the chicken thighs did. I turned up the heat but it started to smoke. It was getting late and I was by then, very grumpy. Forget it! Time was ticking and I didn’t have the “bandwidth” to start over. So I threw in the proverbial towel and grabbed a frying pan.
As you know, I avoid frying as much as possible, but by this late hour Saba Man was not going to have any dinner if I didn’t break out the frying pan. Ugh! So there you go. I jotted down the recipe as best as I could remember but of course there are many, many lemon chicken recipes out there for you to explore too. Lemon chicken is yummy and usually very easy to make.
The accompanying rice is not fried, but mixed hot rice with eggs, peas and garnished with steamed mixed vegetables from a frozen bag of pre-sliced stir- fried pea pods, carrots, water chestnuts, etc. (Again, my freezer to the rescue!)
Lemon Fried Chicken
Ingredients:
2 chicken breasts- boneless, skinless halves, cut into bite size pieces.
1/4 cup cornstarch
2 pinches salt
1 pinch pepper
1/8 cup water
2 small eggs or 1 large egg
1 cup Cooking Oil
Lemon Sauce:
1 cup water
1/2 cup freshly squeezed lemon juice
3 tablespoons sugar (add more or less to taste)
2 tablespoons cornstarch
Sliced lemons for garnish.
Directions:
Combine cornstarch, salt and pepper. Blend in water and eggs. Mix well. Dip chicken pieces into mixture. Fry chicken in oil for about 5 minutes until golden. Drain thoroughly.
For the sauce: Combine the water with cornstarch, then add the lemon juice and sugar in a saucepan. Cook over medium heat, stirring, about 5 minutes until sauce boils and thickens. Pour over chicken. Serve and eat immediately. For packing in the bento box, you may want to pack the lemon sauce separately.
Don’t do what I did (see the photo) and pour the sauce over the chicken in the box. It’s going to be a very uncrispy lemon chicken when Saba Man opens his bento box.
Not the healthiest of bento boxes and now a soggy one too.

Oh I feel sorry for you hapa. We all know these days where you can get the idea that your kitchen hates you. Yesterday I smoked my whole kitchen because I tried to fry chips made of sweet potoatoes…
