Good Morning Sunshine Bento Box

Pancakes, veggie omelet with veggie sausages
Yesterday, I was fiercely craving pancakes and I could not get them out of my mind. I finally gave in to the “call of the carbs”, grabbed Saba Man, and drove over to a nearby pancake joint to eat breakfast for lunch. The restaurant totally piled on the food, (why do they do that?) which gave me the opportunity to create a pancake bento box, just in time for Saba Man’s graveyard shift at work. This means he’ll be eating his breakfast before the sun comes up, but it’s all good because I placed a little bit of sunshine in there for him.
Besides the pancakes, the veggie omelet is also leftover from our breakfast outing. I added tofu sausage, tomatoes and starfruit, which I dyed, as an experiment. Last week, I featured sliced starfruit in another bento box lunch ,but when viewing the posted photos, the fruit looked a little washed out. This time I soaked them in pomegranate juice ahead of time, in hopes of turning them a bright red or purple. As you can see, it didn’t work as planned. They did darken from their natural pale yellow, but not exactly in a attractive way. Luckily, they taste pretty much the same in their altered color. Oh well, if the starfruit doesn’t bright up his meal, the little smiling piece of roasted yellow bell pepper should do the trick as the “light” for Saba Man’s breakfast in the dark.

Charming! The smiling sun is just adorable. Hooray for bentoing creatively with leftovers! My husband is about to return from a four month deployment overseas and I can’t wait to go back to all of our favorite places and make bentos with Fish and Tofu Casserole, or Crispy Panang Duck, to name a couple of favorites!
